Amherst College Dining Services strives to buy locally grown products whenever possible. Not only does such an initiative promote support of local businesses and the local economy, it also promotes sustainability.
Locally grown products are generally more eco-friendly in that there is energy savings from avoiding the need to package, transport and ship such products long distances.
Approximately 10% of the Dining Services food purchases are from local vendors and include such staples as chicken, eggs, beef, fresh produce, honey, etc.
Starting in the Fall of 2009, Amherst College implemented post-consumer food waste composting in Valentine Dining Services. Approximately 8 tons of food waste are being diverted each month. Each semester, by sending this this organic material to a local farmer to be converted to compost instead of sending it to the landfill, we reduce greenhouse gas emissions by the equivalent of taking 2 cars off the road for an entire year.
