Lee and Erin's smoothies:

1-1.5 banana(s)
1  bag frozen whole berries - we used a strawberry, blueberry, red raspberry,  blackberry mix, but you can really use whatever fruit you like
1 cup Vanilla yogurt
1/2 cup Cranberry Juice

Put everything in a blender and blend until it reaches desired consistency.  Pour and enjoy!


Mike and Preston's salsa

Salsita Recipe for 6 people:

2 large tomatoes
1/2 of a medium-sized white onion
1/4 of a cilantro bunch

Finely chop all ingredients. Add salt to taste.  Best served with your favorite Mexican meal (tacos or gorditas) or with tortilla chips.  Tastes very good with guacomole as well.

Note: Chopped jalapeno pepper may be added for spice.


Lais and Joe's Foccacia


Ingredients:

6 cups of wheat flour
2 packs of dry yeast
3 tbs. of olive oil
3 tbs. of butter
1 tbs. of rosemary
1 tbs. of thyme
1 tbs. of oregano
1 tbs. of sugar
½ tbs. of thick sea salt
1 tbs. of powder bouillon
2 ½ cups of warm milk

Put the yeast in a large bowl and add to it the sugar, 2 tbs. of flour and ½ cup of water. Cover the mix with plastic and let it sit for 10 min. Meanwhile, heat the olive oil (in a saucepan or in the microwave) and to it add the herbs and the bouillon.
When the yeast is ready, add the rest of the ingredients (except the salt), leaving the flour to be the last on to be added. Mix and knead the dough until it is smooth. Cover it and let it rise until it doubles the size (takes approximately 30 min). Preheat the over to 390 F. Split the dough in half and open each part into a greased baking pan. Cover it and let it rise until it double the size. Bake it for 20 min, stopping halfway to sprinkle the salt and some rosemary.
